Everything here is judged on how it holds up after a full season outdoors, not on how it photographs. If a thing rusts, warps, or reads five degrees slow, that is what gets written down.

Fire and Food Safety
Cooking with live fire carries real risk, and most of it is avoidable. Never operate a grill, a smoker, or a charcoal chimney indoors, in a garage, in a shed, or on an enclosed porch. Burning charcoal and wood give off carbon monoxide, which has no smell and no taste, and it has killed people who were only trying to stay out of the rain. Keep any cooker well clear of the house, the eaves, deck railings, and anything overhanging.
A charcoal chimney is hot metal holding live coals. Set it on concrete, brick, or bare ground, never on a wood deck or dry grass, and always use a heatproof glove on the handle. Do not add lighter fluid to coals that are already lit. Cast iron griddles and grates are heavy, and they stay hot far longer than they look hot, so move them with two hands and gloves and give them plenty of time before you touch them bare handed.
Grease is the other common fire. Clean the drip pan and the grease tray between cooks, because a season of buildup is fuel. If grease does catch, close the lid and shut the vents to smother it, or use a dry chemical extinguisher. Never throw water on a grease fire. Never put a cover on a grill that is still warm, and never store a cooker or a bag of charcoal against the side of the house.
On food, use a thermometer rather than a guess. Poultry needs 165F, ground meats 160F, and whole cuts of beef, pork, and lamb 145F with a rest. Smoking matters here more than grilling does, because low temperature cooking holds food in the range where bacteria grow for far longer, so watch both the temperature and the clock. Keep children and pets away from a lit cooker, and remember that a kettle stays dangerously hot for hours after the food comes off.
If your equipment runs on propane, check the connections with soapy water before the season and never store a cylinder indoors or below ground level. Nothing on this site is professional safety advice. Follow the manufacturer instructions that came with your equipment, and follow your local fire rules, which may restrict open flame entirely during a dry spell.
